HORSEGRAM/KOLLU CHUTNEY

Super easy to make, tastes like tomato chutney but it's very healthy as we add Kollu/Horsegram.

INGREDIENTS :
Horsegram/Kollu - 1/2 cup
Roasted gram dal - 2tsp
Onion - 1
Tomato - 2
Garlic - 5 pods
Red chilli - 4
Tamarind - a pinch
Oil - 2tsp
Salt - to taste

TO TEMPER :
Oil - 2tsp
Mustard seeds - 1tsp
Urad dal - 1tsp
Curry leaves - few

METHOD:
1. In a pan, dry roast horsegram and roasted gram dal. Keep it aside.

2. In the same pan, add 2tsp oil, chopped onions, garlic and saute till it gets cooked. Now add tomatoes and cook till it turns mushy. Add red chilli, tamarind and saute for few seconds.

3. Grind the horsegram and roasted gram dal along with the onion mixture and salt, to a nice paste. You can also add grated coconut by I avoided it.

4. Heat a pan, add 2tsp oil, mustard seeds, urad dal and curry leaves. Let it splutter. Add this seasoning to the chutney and it's ready.

Horsegram dosa with leftover dosa batter

I had some leftover dosa batter and horsegram so came up with this recipe. As my dosa batter was ready it was easy to do this.

INGREDIENTS:
Horsegram (Kollu) - 1/2 cup
Dosa batter - 5 to 6 ladles
Onion - 1 (finely chopped)
Green chilli - 2 (finely chopped)
Salt - to taste

TO TEMPER:
Oil - 2tsp
Mustard seeds - 1tsp
Jeera - 1tsp
Curry leaves - few
Hing powder - a pinch

METHOD:
1. In a pan, dry roast horsegram till the raw smell goes off and powder it in a mixer.

2. In a bowl, add about 5 to 6 ladles of ready dosa batter, horsegram powder and salt to taste. Mix it well by adding little water and bring it to a pouring consistency.

3. Heat a pan, add oil, mustard seeds, jeera, curry leaves, hing powder and add it to the batter.

4. Add finely chopped onions, green chilli and mix well.

5. Now make the dosa and cook till it turns golden on both sides.

And super easy to make Kollu Dosa is ready. It's very healthy too. Do leave your feedback for this post.

Peas Pulao (Toddler special)

This is exclusively for toddlers, so it will be different from the usual Pulao recipe.

INGREDIENTS:

Fresh green peas - 1 cup
Onion - 1 (finely chopped)
Garlic - 4 or 5 pods (finely chopped)
Green chilli - 1 (cut into two halves)
Oil - 2tsp
Ghee - 2tsp
Salt - to taste
Rice - 1.5 Cups

METHOD:

1. In a pressure cooker, add 2tsp oil and once it gets heated add the onions. You can also add spices like bay leaf, cardamom and cloves before adding the onions.

2. Add garlic, green chilli and saute it well, till the raw smell goes off.

3. Now add peas, washed rice and add 2.25 cups of water. Mix it well.

4. Add salt, let the salt be a little higher. You can check for salt taste in this stage, if you need more, add it and mix well. Add 2tsp of ghee and mix well. This is just for the aroma.

5. Close the pressure cooker and leave it for 3 whistles. Let the pressure release by itself and then open it.

Tadaah! Peas pulao is ready. I don't grind chillies and ginger as toddlers don't like it spicy. Do check out this and post your feedback.

BISI BELE BATH - TODDLER SPECIAL

Hola! I'm back with many recipes!!

For now, it's toddler special Bisi bele bath. It's almost the same as how we normally do but with little changes. I have removed few ingredients from the original recipe. So, here it is:

PREP TIME : 15 MINS
COOK TIME : 30 MINS
SERVES : 1

INGREDIENTS:

RICE - 3/4 CUP
TOOR DAL - 1/4 CUP
ONION SHALLOTS - 1/4 CUP (I have added normal onions and in this case 1 large onion, cut into pieces would do)
VEGETABLES - 1/2 CUP (Finely chopped beans, carrot, Peas, potato and capsicum)
TAMARIND - Small lemon sized ball
OIL - 1TSP
GHEE - 3 TSP
BISI BELE BATH POWDER - 2 TBSP
HING - PINCH
CURRY LEAVES - FEW
MUSTARD SEEDS - FEW

METHOD:

Soak tamarind in a cup of hot water for 10 - 15 minutes and extract its juice.

Pressure cook rice and dal separately. Mash it.

In a pan, add oil, mustard seeds and let it splutter. Then add curry leaves.

Add onion and once it turns transparent, add the vegetables. In case of adding tomato, add it after the onions.

Saute the vegetables well. Sprinkle water, cover the vegetables and cook it for few mins.

Add the tamarind juice, salt and bisi bele bath powder.

Cook it covered for few minutes, till the raw smell goes off.

Add the mashed rice and dal. Mix it well.

Add ghee and mix.

Cook for 2 - 3 minutes and switch off.

BISI BELE BATH is ready!

Tips : I usually add less salt, and omit vegetables (at times).

BISI BELE BATH POWDER :

As this is toddler special, I prefer homemade powder.

Ingredients :

OIL : 1 TSP
CORIANDER SEEDS : 1TBSP
RED CHILLIES : 4
CHANNA DAL : 1 TSP
URAD DAL : 1 TSP
CLOVES : 1
CARDAMOM : 1

METHOD:

In a pan, add the oil. Once it gets heated, add the other ingredients.

Roast it well until it becomes light brown.

Dry grind it and the powder is ready.

Oats dosa

Hola! I am back after a really long time and this time it's "Oats Dosa". I have been taking oats porridge everyday for the last few months and really got bored of it. So I wanted to try some other dish with oats and ended up in this. Oats dosa is very easy to make and a healthy breakfast/tiffin/dinner.

Preparation time: 30 minutes
Cooking time: 15 minutes
Serves: 8 dosas

Ingredients:

Oats - 1 cup
Rawa - 1/4 cup
Rice flour - 1/4 cup
Wheat flour - 1/4 cup
Curd - 1/4 cup
Onion - 2 numbers finely chopped
Tomato - 1 finely chopped
Green chilli - 2 finely chopped
Ginger finely chopped - 1tsp (optional)
Cumin seeds - 1tsp
Pepper - 1tsp (optional) (pepper powder can also be added)
Coriander leaves - 1tbsp finely chopped
Salt - as required
Water - as required

Method:

Grind the oats to a fine powder in a mixer.

In a large bowl, add powdered oats, rice flour, wheat flour, rawa and mix well.

Add salt, pepper, cumin seeds, ginger, green chilli, coriander leaves, onion, tomato and curd to the mixture.

Now add water and bring it to dosa batter consistency.

Let it wait for 15 - 20 minutes.

Heat a tawa and sprinkle oil on it.

Use a laddle and pour the batter to make dosa. Sprinkle some oil on the sides. Keep  it on the medium flame and allow the dosa to get cooked well. Hence flipping it might be difficult. If you are not adding onion and tomato while making the batter, you can add it after pouring the batter on the tawa.

Once it's well cooked, flip it. Leave it for few seconds and transfer to a plate.

Oats dosa is ready!!!! Serve it with milagai podi/chutney/sambar.

You can also make this without adding onion and tomato.

Eggless Carrot Cake Recipe (No Butter)

It was a sunny monday afternoon and I had many leftover carrots. I was too tired making kheer/halwa and wanted to make something different. That's when I decided to bake a cake. When I was searching for the perfect recipe, I found it in SHARMI'S PASSIONS and believe me it came out really well.

Preparation time: 20 minutes
Cooking time: 20 minuts
Serves - 3 or 4

Ingredients:
Maida: 3/4 cup
Wheat flour: 1/4 cup
Grated carrot: 1/2 cup heaped
Curd: 3/4 cups
Olive oil: 1/4 cup
Milk: 2.5 tbsp
Powdered sugar: 1/2 cup
Vanilla essence: 1/2 tsp
Baking powder: 1/2 tsp
Baking soda: 1/2 tsp
Salt: 1/4 tsp
Walnuts, chopped: handful

Method:

1. Grate carrots and keep it aside.

2. Sieve maida, wheat flour, baking soda and baking powder.

3. In a bowl, add curd, sugar, milk and olive oil. Mix well until sugar dissolves. I have omitted cinnamon powder in this recipe. If you want, 1/4 tsp of cinnamon powder can be added in the next step.

4. Add vanilla essence and mix it. Now, add carrots and the flour mixture.

5. Whisk it well to till a creamy batter is formed. I forgot to add walnuts. But, you can add it in this step and mix it well. Alternatively, after you put the batter in the baking tray, you can just sprinkle it on the top.

6. Preheat the oven at 180 deg C for 10 mins.

7. Place a butter paper inside the tin, grease it with maida and butter. Now pour the batter to the baking tray.

8. Bake at the same temperature for 10-20 mins. After 10 minutes, insert a toothpick at the center, if it comes out clean, the cake is done. If it does not, then you can bake it for few minutes. After 10 minutes, I recommend you to keep checking it regularly. Bake it until the toothpick comes out clean.

9. Once it's done, transfer the tin onto a wet cloth. Allow it to cool for 20-25 minutes, then invert and peel of the butter paper.

10. Allow it to cool for an hour or little more before you cut it into pieces. I stored it in an air tight container and kept it in the fridge. But in the original recipe it says you can keep it in the room temperature for 2 days.

I added silver balls for decoration. But I would recommend you to add nuts.


Date and Nuts laddoo

With some auspicious days coming up, I texted my aunt and asked her for any healthy recipes. She gave me this idea and I have made few changes to it. This is very healthy as I have not used much ghee and I have used jaggery for sweetness. Very easy to make!!!
Preparation time : 10 minutes
Can make 18-20 balls
Ingredients:
Seedless dates - 200 gms
Cashew, Walnut and Badam - 1/2 cup each.
Jaggery - 1/2 cup (optional)
Method:
  1. Grind the dates roughly in a mixie. Keep it aside.
  2. Grind cashew,walnut, badam and jaggery together.
  3. Mix the nuts and jaggery powder with the dates.
  4. Grease your palm with ghee and knead the mixture to make a dough. Divide it into equal sides and roll them into laddoos.
Variations:
  1. You can roast the nuts and then powder them, if you don't like the raw smell of the nuts.
  2. After making the balls, you can roll it in nuts powder or desiccated coconut.
  3. While serving them, you can place them in a cupcake paperliner.
